Spring is here! It’s the start of months of abundance of fresh, nutrient-rich produce. If you’ve fallen into any kind of winter comfort food eating rut, now is the time to “spring clean” your plate by incorporating seasonal foods that are lighter, brighter, and packed with health benefits.

The Foods of March

Here are just some of the best fresh ingredients to find at your local farmer’s market or grocery store and begin to enjoy this month:

  • Asparagus – A powerhouse of vitamins A, C, and K, plus gut-friendly fiber.
  • Artichokes – High in antioxidants and great for liver detoxification.
  • Strawberries – One of the first fruits of spring, loaded with vitamin C and antioxidants.
  • Peas – Naturally sweet and full of plant-based protein.
  • Radishes – Crisp and peppery, rich in vitamin C and detoxifying properties.
  • Spring Onions – Milder than regular onions, they add a fresh touch to dishes.

Spring Asparagus & Strawberry Salad with Lemon Dressing

It’s a truth that sweet, seasonal strawberries make everything taste better. Asparagus is no exception. This delicious combo features in this light and refreshing salad that is bursting with the flavors of spring. Sweet strawberries, crisp asparagus, and a zesty lemon dressing make it the perfect way to welcome the season.

Cook Time: 2 minutes

Total Time: 12 minutes

Servings: 2

Ingredients

  • 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 cup fresh strawberries, sliced
  • 4 cups mixed greens (such as arugula or baby spinach)
  • ¼ cup crumbled feta cheese (optional)
  • ¼ cup chopped walnuts or almonds
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp honey or maple syrup
  • ½ tsp Dijon mustard
  • Salt and pepper to taste

Instructions

Start by blanching the asparagus by bringing a small pot of water to a boil. Add the asparagus and cook for 1-2 minutes, depending on the thickness of the stalk, until bright green and slightly tender.

When cooked, transfer to a bowl of ice water. Don’t skip this step! This stops the cooking process. When cooled, drain and set aside.

In a large bowl combine the mixed greens, strawberries, blanched asparagus, feta, and walnuts. If you like your salad chilled, take a moment to pop it in the refrigerator while you mix the dressing.

In a small bowl whisk together the olive oil, lemon juice, honey or maple syrup, Dijon mustard, salt, and pepper.

To serve, drizzle the dressing over the salad and gently toss to coat. You’re now ready to spring into health! Enjoy!
